⏱ Cook time 10 min March 25, 2026 Fried Egg Pasta
Crispy garlic flakes meet the savory depth of butter and chicken stock — a 10-minute pasta that's different from both aglio e olio and soy-egg rice
Instructions
- In a pan with olive oil, fry the sliced garlic until crisp, almost like deep-frying.
- Once the garlic softens slightly, add the chili flakes; once the garlic turns golden brown, remove it and set aside.
- In the garlic-infused oil, add the 3 eggs and the pat of butter, breaking up just the whites first as they cook.
- Add the cooked pasta, a spoon of chicken stock, and a splash of pasta water, cooking slowly until the pasta and egg come together.
- Top with the reserved garlic flakes to finish.
Tips
- Adding the pasta and tossing it slowly with residual heat, rather than high heat, is the key to a thick, glossy sauce.
